Description

The baking is simple and quick. I'm telling you how to bake “Graf’s Ruins” – a very tasty and impressive cake. My children love it more than any other homemade cakes, so I bake it about once every three months. Naturally, my hand is already seasoned :) So I’m sharing my best, proven recipe for this cake – I hope it will be useful to you and you’ll like it. Let me say right away that making the “Graf’s Ruins” cake is a rather labor‑intensive task, so be prepared – you’ll have to work hard. However, it’s worth it. The baking is ready. Serve at the table.

    We prepare the dough for the layers. For this, beat four eggs and a cup of sugar until smooth, then add flour and baking soda. Beat.

    Pour the resulting dough into a butter‑greased pan.

    Place it in a preheated oven at 180 °C and bake until done (check doneness with a toothpick—if it comes out dry, it’s ready). Cut the finished cake layer in half lengthwise. Keep one half whole, and cut the other into cubes.

    Now let's make the cream. Mix a cup of milk, an egg, a tablespoon of flour, and half a cup of sugar in a saucepan. Place it over heat and cook until thickened, stirring constantly. Add 100 grams of butter and vanilla to the cooled cream.

    Now let's make meringue. For this, mix 4 egg whites, a cup of sugar and a little vanilla. Stir, place over a water bath and cook, constantly whisking, for 5–7 minutes. Pipe the resulting mixture onto a buttered baking sheet in portions using a pastry bag.

    Place in an oven preheated to 100 °C and dry for 1 hour. Then turn off the oven and keep the meringue in the turned‑off oven for another hour.

    The meringue is ready.

    We start assembling the cake. Spread the layer with white cream.

    Arrange the meringue in a circle.

    Melt half of the chocolate with a quarter cup of milk and a small piece of butter in a double boiler. Add the sliced sponge cake to the resulting mixture and stir well.

    The chocolate‑cream‑coated sponge is placed on the base, spread with cream on the sides, and meringue is arranged around it.

    Place the remaining meringue on top.

    Melt the remaining piece of chocolate with vegetable oil in a double boiler, and drizzle the resulting glaze over the cake. Place the cake in the refrigerator, let it stand for a couple of hours, after which the “Grafskie razvaliny” cake can be served at the table. ;)
