Description

The baking is simple and quick. The cake "Gorka," also known more popularly as "Monastery Hill," requires a light shortcrust dough made with margarine and honey. Use liquid honey. For making the Gorka cake, I recommend using fresh cherries, as they contain less moisture and will be juicier in the finished dish. If using frozen berries, be sure to thaw them in advance. See the recipe. Serve with tea or coffee.

    For the dough: mix the eggs with 200 grams of sour cream, add honey, vanilla sugar, softened margarine, salt, one cup of sugar, vanilla flavoring to taste, and honey (preferably liquid honey). You can mix everything with a mixer. Then gradually add flour (up to 5 cups may be used). The dough should not be sticky, but soft. Add flour until you achieve the desired consistency. Divide the dough into several portions, from which you'll make thin pancakes for the rolls. The recipe yields a large amount of dough, but I only had enough cherries for 17–18 rolls.

    Roll out elongated thin pancakes, place cherries in a row on them, and sprinkle with sugar.

    Roll into a log, tucking in the edges.

    Line a baking sheet with parchment paper and place the rolls seam side down. Bake in a preheated oven at 180-200°C until done— the rolls will slightly increase in size and turn golden brown.

    By the way, since you'll have a lot of dough, I suggest using it to bake cookies: add nuts and dried fruits (or cranberries) to the dough, use cookie cutters to make different shapes, and you can bake them alongside the rolls.

    Let the finished rolls and cookies cool slightly.

    Next, assembling the mound is very simple: prepare a sour cream cream (beat sour cream with a cup of sugar well using a mixer), place the pastry tubes on a serving dish in the shape of a pyramid and generously coat them with the cream. Finally, cover the entire mound with cream and decorate with chocolate glaze and crushed cherries or cranberries.

    I recommend putting the finished cake in the refrigerator for a few hours to let it soak—that's when it becomes much tastier. Serve with tea and coffee; here's how it looks when sliced.
