Perfectly pairs with tea and coffee. Today I want to share with you the classic recipe for "Esterházy" cake. This wonderful cake is widely popular in Hungary, Austria, and Germany, but it first originated in Hungary and was named after Pal Antal Esterházy, the Minister of Foreign Affairs. I learned this recipe relatively recently from a good acquaintance of mine who works as a pastry chef. After trying it for the first time at her place, I fell in love with this cake so much that I immediately decided to make it at home. It didn't work perfectly the first time, but I eventually achieved the desired result, and you, by putting in a little effort, can also prepare this delicious treat. Gradually mix the egg whites with sugar and beat until thick, stiff white peaks form. Now gently fold the egg white-sugar mixture into the finely chopped and oven-dried hazelnuts using a bottom-to-top motion.

Now, using the prepared mixture, we draw a circle on parchment paper—this will be our cake layer.

Place this cake layer in a preheated oven at 160 degrees and bake for 25 minutes.

Do the same with the remaining mixture; you should get about 6-7 layers in total. Let them cool, then remove from the parchment paper.

Now mix 1 egg yolk, half a cup of sugar, 250 ml of milk, and one tablespoon of flour. Add vanilla and cook this mixture over low heat until it thickens. Then combine the custard with condensed milk, beat well, add softened butter, and beat again.

We will assemble the cake in a mold so that it holds together better. Place one cake layer, spread it with the prepared cream, add the next cake layer, spread it, and so on. Leave the cake in the refrigerator overnight so the layers can soak up the cream.

In the morning, we remove the cake from the pan and spread the remaining cream on the sides and top, then put it back in the refrigerator for a couple more hours.

When the cream has set, we drizzle a chocolate pattern on the surface of the cake and decorate the sides with ground hazelnuts. That's it, our cake is ready!
