Description
The recipe won't take much time. 1. How to make "Ekaterina" cake? Nothing complicated. To prepare the cake layers, beat eggs with sugar until white. Add sour cream and beat thoroughly once again. 2. Gradually add the pre-sifted flour and baking powder. Gently mix until no lumps remain. 3. Divide the prepared batter into 3 parts. Mix the first part with cocoa powder, the second with cocoa and crushed nuts, and the third with ground poppy seeds. 4. Place each batter into a preheated oven. Bake each layer for about 12–15 minutes (check doneness with a toothpick). Let the layers cool completely. 5. Sprinkle gelatin into slightly warm cream. Let it soak (if the gelatin is not instant, place over low heat and gently warm without bringing to a boil). 6. Mix sour cream for the frosting with sugar and stir thoroughly. Add the dissolved gelatin. 7. Place the nut-flavored cake layer onto the bottom of a springform pan and generously spread with frosting. 8. Place the poppy seed layer on top, also generously coated with frosting. 9. Cut the third (chocolate) layer into small pieces and add them into the remaining frosting. Gently mix. 10. Spread this mixture over the cake and pour the remaining frosting on top. 11. Melt chocolate using a double boiler and pour it over the cake. Optionally, decorate the top with sliced marmalade or dried fruits. That's it—your homemade "Ekaterina" cake is ready. Now refrigerate it for at least 4 hours, preferably overnight. Serve with tea or coffee.
