Description
The recipe won't take much time. This cake can be prepared in absolutely different ways. There's no specific recipe, which means you have complete freedom to experiment in the kitchen! The main rule for this dessert is that it should reflect its name. The key colors are two—black (dark) and white (light). The more contrasting the shades, the more beautiful the baked good will turn out. The baking is ready. Serve at the table.

Step 1

We start preparing the sponge cake. Separate the egg whites from the yolks. Beat the whites with a mixer in a dry bowl, gradually adding a cup of sugar. Once stiff peaks form, move on to the yolks. Beat the yolks with the melted butter and a cup of flour. Incorporate the yolk-flour mixture into the egg white mixture. Then gradually add another cup of flour. Keep the mixer running throughout this process. Neutralize the baking soda with vinegar and add it to the batter. Add vanilla.

Divide the dough into 2 parts. One part will be light, the other dark. To achieve this, simply add a couple of spoons of cocoa to one part and mix with a blender. To balance the consistency, add a spoon of flour to the light part of the dough and also mix with a blender.

We bake the sponge cake in different greased pans, as usual. Place in a preheated oven at 180-190 degrees for 25-30 minutes. Then let it cool. The sponge cake should not only cool down, but also rest—do not touch it for about 8 hours. Cut each cake layer in half horizontally, resulting in 4 layers total.

Now let's move on to the cream. Mix sour cream with sugar or powdered sugar. Adjust the amount of sugar to your taste—some prefer it sweeter, others less so. I find one cup of sugar sufficient for 700 grams of sour cream. Do not overbeat the sour cream; mix it with a mixer at the lowest speed. Place it in the refrigerator to chill and set.

Take out the sliced cake layers. Spread cream on the bottom layer. Place a layer of a different color on top and spread it with cream as well. Repeat with all the layers. Leave a generous amount of cream on the top. If desired, you can also spread cream on the sides of the cake. Put the cake into the refrigerator.

Meanwhile, you can fry the nuts for sprinkling. When the cake has cooled and soaked through, which takes about 3-4 hours, melt the chocolate bar. Sprinkle the nuts over the cake and pour melted dark chocolate on top. The "Day-Night" cake is ready! Chill it in the refrigerator before serving.
