
Simple cake
Description
Perfectly pairs with tea and coffee. A simple yet very tasty and impressive cake! You can decorate it as you like—chocolate, coconut flakes, different types of cream. For the base, you can use white or coffee-flavored cookies (by adding cocoa to the dough), or even combine both. Serve warm or chilled. Ideal with tea.

1. Separate the egg whites from the yolks, put the whites in the fridge.

2. To a bowl with chicken egg yolks, add a cup of granulated sugar and beat at medium speed (if using a mixer) or with a hand whisk.

3. Whip the well-chilled chicken egg whites with a pinch of salt, then gradually add the cup of granulated sugar in portions, whipping until stiff peaks form.

4. Combine the egg whites with the yolks, beat at low speed, and gradually add the flour, followed by the baking powder and baking soda previously neutralized with vinegar. Mix until smooth.

5. Transfer the dough into a pastry bag for piping.

6. Grease the baking sheet with oil or line it with parchment paper, then pipe small portions of dough into rounds (size depends on the desired shell shape). The rounds will spread sideways during baking, so leave space around them. Bake in a preheated oven at 200°C for 5–7 minutes.

7. Transfer the cookies from the baking sheet to a plate so they cool down completely.

8. Melt 200 grams of butter, add a cup of sugar, 0.5 liters of sour cream, and vanilla sugar, then mix thoroughly.

9. Set aside a few slices for later decoration. Layer the remaining slices on a plate to form the shell, spreading each layer with cream.

10. Arrange the legs, tail, and head of the turtle using the reserved cookies. In a saucepan, mix the remaining granulated sugar with 100 grams of butter, sour cream, and 5 tablespoons of cocoa; cook the glaze until the sugar granules dissolve. Coat each shell cookie with the glaze.

11. Decorate the turtle as desired, for example, with coconut flakes, cream, nuts, or dried fruits. Draw eyes, claws, nose, and tail. Let the cake set and soak, then serve.
