
Chokeberry cake with sour cream
Description
Homemade baked treat for tea. You can make this cake with dried chokeberries (whole berries), but I prefer using ground chokeberries. This cake has a unique flavor and a purple hue when sliced. The small particles of chokeberries give the impression that the sponge cake contains nuts. Serve with tea or coffee.

Separate the egg whites from the yolks. Beat the yolks with sugar until pale.

Add ground chokeberry, clarified butter, and kefir to the egg yolks. Mix well.

Beat the chilled egg whites with a pinch of salt. Gently mix with the mixture prepared earlier.

Add the baking soda and extinguish it with vinegar.

Sift the flour. Add it to the mixture and mix well. The dough should have the consistency of thick sour cream.

Line the baking pan with parchment paper, grease it, and pour in the batter. Bake at 200 degrees for 30-40 minutes.

For the cream: beat sour cream with sugar. Cut the cake layer in half and let it cool. Spread with cream and let it soak.
