
Pancake cake
Description
The recipe won't take much time. You can make the pancakes for the cake using your favorite recipe, just make sure they are not too thick so they can soak up the filling well. Instead of raspberry jam, cherry jam, soft caramel, or grated chocolate added to the cream will work perfectly as well. This is a great option for a family celebration, for Maslenitsa, or simply to treat your family. Serve chilled.

First, prepare all the necessary ingredients for making pancakes for the cake. Take the egg and milk out of the refrigerator in advance so they can reach room temperature.

In a bowl, break the eggs and add salt, sugar, and vanilla sugar; whisk well with a whisk until homogeneous.

Pour the milk into a bowl and mix until smooth.

Place wheat flour, cocoa powder, and baking powder into a bowl. Mix well until the ingredients are evenly distributed.

Sift the flour mixture into the liquid part.

Mix everything until you get a smooth, not thick batter. You can do this with a whisk or blend it with a blender.

Pour vegetable oil into the dough and mix thoroughly. Cover the bowl with dough and let it sit for 15 minutes.

Grease a frying pan with vegetable oil and heat over medium heat. Pour a small amount of batter onto the hot pan and spread it into a thin layer over the bottom surface. As soon as the top surface of the batter sets and the bottom turns golden brown, flip the pancake and cook for a little longer until golden brown. Transfer the pancake to a plate. Continue cooking pancakes until all the batter is used up. Stack the cooked pancakes on a plate and let them cool. Using a pastry ring, trim the edges to make all pancakes the same size. My ring is 16 centimeters in diameter.

While the chocolate pancakes are cooling, prepare the cream. You will need the following ingredients.

Place the cream cheese into a clean bowl, add vanilla sugar, powdered sugar, and pour in the cream. Beat until fluffy, but do not overmix, otherwise the cream may separate.

Place a small amount of cream on the base and put a pancake on it. Spread a layer of cream on the pancake.

After every 2-3 pancakes, add an extra layer of jam.

Layer the chocolate pancakes, cream, and jam one on top of another. The top layer should be cream. If desired, you can set aside some cream for decoration. Place a cake ring around the cake to keep the layers from shifting and to maintain its shape.

Cover the mold with plastic wrap and refrigerate the pancake cake for 8 hours to allow it to soak and stabilize, or serve after 30 minutes, though it will hold its shape less well. Remove the ring and decorate the top to your taste with berries, chocolate, nuts, or decorations made from the reserved cream.
