Description
Perfect with tea and coffee. This soaked cake with banana flavor suits both a festive table and weekdays, whenever you want to treat your loved ones. If you like, bake the sponge cake ahead of time—and bake more than one. Store sponge cakes wrapped in plastic wrap in the freezer, somewhere without strong smells of bell pepper or garlic. Make any cream or frosting you prefer.

Prepare the listed ingredients. You can use sour cream of any fat content, and cottage cheese of any fat content as well. Choose moist cottage cheese.

Crack the chicken eggs into the bowl of a food processor or mixer, adding salt and granulated sugar at the same time. If you like, add a little vanilla sugar. Beat on high speed for 3–4 minutes, but no longer, so you do not overbeat.

Add cocoa powder to the beaten egg mixture. The richer its colour, the more chocolatey the sponge will be.

Add top-quality wheat flour and gently fold the dry ingredients into the egg mixture—do not beat!

Grease the tin with vegetable oil and pour in the prepared sponge batter. Preheat the oven to 180 °C and bake on the middle shelf.

Bake the sponge cake for 35 minutes until a skewer comes out clean and take it out of the oven still in the pan. Turn the pan on its side and let the cake cool for 20–30 minutes.

Trim the edges of the sponge cake to loosen it from the pan and transfer it to a plate. Be sure to chill it by wrapping it in plastic wrap and placing it in the freezer for 2–3 hours. You can bake the sponge cake ahead of time—in the evening—and assemble the cake in the morning.

Remove the plastic wrap and slice the sponge cake horizontally into several layers—3–4.

Place the chilled sour cream and cottage cheese in the bowl of a food processor, add powdered sugar and whip for 3–4 minutes. If the cream turns out too thin, add 1 sachet of sour cream or cream thickener and mix for another 2–3 minutes.

Place the bottom cake layer on a plate or dish, add the cream and smooth it out. Cover with the second layer and add the sour cream frosting as well.

Dice one peeled banana into small cubes and drizzle with lemon juice. Toss to combine and spoon onto the cream.

Add another layer, then the cream, and the last layer. Add cream and banana slices, other berries or fruit for decoration, fresh mint leaves, and so on. Chill the cake in the refrigerator for 2 hours so the layers can absorb the cream.
