Step 2

2. Add starch to the flour. Sift and combine with the airy egg mixture.

Step 3

3. Transfer the dough into a piping bag. Pipe the dough onto baking paper in a snake-like motion to form a strip of the desired length. The dough bakes very quickly, within 5-10 minutes, at an oven temperature of 250 degrees.

Step 4

4. Remove the dough from the oven when it turns golden. After slightly cooling, place the biscuit into a bottomless basket-shaped mold.

Step 5

5. Prepare the cream. First, soak the gelatin for about 20 minutes. Then, using a whisk, lightly beat the egg yolks with starch and sugar.

Step 6

6. Place the milk over heat. Add the vanilla pod to it. Stir constantly and bring to a boil. Now combine the egg yolks with the milk. To do this, gradually pour a small amount of the boiling milk into the yolks while constantly stirring. Then transfer everything back into the milk. Stirring constantly, cook over low heat until the mixture thickens.

Step 7

7. Remove the cream mixture from the heat. Set aside one third of it. Cool it down to a temperature not exceeding 50 degrees. Gradually add the melted gelatin, stirring constantly for a couple of minutes. Then strain through a sieve and mix into the remaining portion. Chill the cream.

Step 8

8. Whip the cream until it becomes fluffy and thick. Combine with the cooled cream.
