Description
Homemade dessert for tea. This classic red velvet cake recipe comes from a chef acquaintance of mine. This cake is ordered very frequently at their restaurant, so I became curious and decided to treat my guests at a holiday party with this delicious and elegant cake. 1. First, let's prepare the dough. Dissolve food coloring and half of the total sugar in boiling water, stirring well. Add cocoa powder and mix. Add butter—it will begin to melt—then pour in the beaten eggs in a thin stream, followed by sour cream and baking soda neutralized with vinegar. Mix well. Add vanilla, then gradually sift in the flour, stirring constantly.

2. Bake like a regular sponge cake – in a well-heated oven, bake for about half an hour, until a toothpick comes out dry.

3. While the crust is cooling, let's prepare the cream. Using a mixer, beat the cream cheese and cream until smooth. Then add the whipped cream and sugar, and mix once again. Spread this fluffy cream evenly over the entire cake.

4. A proper velvet cake should be covered with white cream on all sides, and the cream should be as thick as possible. Let the cake chill in the refrigerator for an hour, or even better—longer.
