Description
The recipe won't take much time. The “Aristocrat” cake is simple to make, but it requires time and your attention. The most critical moment is to beat the egg whites correctly so that they reach the proper consistency. If your oven does not allow you to set a temperature, do this: turn it on to the lowest heat and slightly open the oven door. The cake turns out extraordinarily tasty and tender. It will suit any celebration. Serve it warm or chilled. Perfect with tea.

Prepare the ingredients for the cake.

In a dry, clean, deep bowl, place the whites of 6–7 eggs. Beat with a mixer until a stable foam forms. Gradually add vanilla sugar and regular sugar, continuing to beat. A thick, dense mass resembling marshmallow should result.

Set aside 3–4 tablespoons of this protein mass.

Toast the peanuts in a skillet or in the oven. Then grind them and add to the beaten egg whites.

Mix gently with a spatula.

On parchment, draw two circles with a diameter of 18–20 cm. Lay the egg whites with peanuts on them and smooth them out. Place the set‑aside egg whites without nuts on the parchment as well. The shape is arbitrary. This will be the coating for the sides of the cake. From the remaining nut‑free egg‑white mixture, pipe flowers using a pastry bag with a tip.

Dry the cake layers in the oven at 100 °C for 2 hours. The layers should easily release from the parchment.

While the layers are in the oven, prepare the cake cream. In a bowl, mix the yolks, sugar, and starch.

Mix all these ingredients.

Pour the milk into a heavy-bottomed pot and place it on the stove.

When the milk begins to boil, pour the mixture of egg yolks, sugar, cocoa and starch into it. While constantly stirring, bring the cream to a thickened consistency. Cool the cream.

Place the softened butter into a bowl and add the chilled cream one tablespoon at a time, beating with a mixer each time.

Cake assembly. Place the first layer on a plate. Spread with cream. Wash the prunes and cut them. Place them on the cream.

Cover with the second layer. Spread the cream over the top and sides of the cake. Decorate with flowers made of meringue and cream. Sprinkle the sides with crushed meringue.
