
Cherry Cake

Baking is simple and quick. What table can do without dessert? And of course, you can satisfy the tastes of your guests, even the most demanding ones, with a delicious cake. I suggest making the “Ai-Petri” cake. It got its name, like the famous mountain in Crimea, for a reason. After all, the cake really resembles a mountain. Your guests and family will be won over by a tender chocolate sponge cake soaked in sour cream frosting, and cherries will add a special sweet-and-sour highlight. Chocolate and nuts will decorate your cake. Serve it cooled or slightly warm.

Prepare all the ingredients for making the cake.

Crack the eggs into a bowl and add sugar. Mix thoroughly with a whisk and pour in the milk.

Add the sifted flour and baking powder, then mix the batter.

Pour in the refined sunflower oil and mix the batter well once more.

Dilute the cocoa powder in a small amount of milk and pour it into the dough.

Mix the batter with cocoa. Its consistency should be like thin sour cream.

Place the dough into a baking dish.

Bake the cake layer in an oven preheated to 175–180 degrees for 40–45 minutes. Check doneness with a wooden skewer. When pierced, it should come out dry.

Cut the finished cake layer in half lengthwise. Cut a circle out of one half.

Cut the remaining cake layer into small cubes.

Line a deep bowl with plastic wrap so that its edges hang over the sides. Mix the sour cream with powdered sugar. Set aside a few tablespoons of the sour cream frosting. Spread two tablespoons of the frosting on the bottom of the mold. Add cubes of sponge cake, chopped walnuts, and pitted cherries.

Thus, alternating sponge cake cubes, cream, nuts, and cherries, assemble the entire cake.

Cover the top of the bowl with the cake with a round sponge layer.
