
Meringue cake with berries

We start preparing the cake base — the layers. To do this, break the eggs and separate the whites from the yolks. Next, beat the egg whites until they form a fluffy foam. Gradually add the sugar, continuing to beat throughout.

Add the starch to the prepared mixture. It should be mixed with the mixture using smooth motions from top to bottom. Do not mix in circular motions.

Line the baking tray with parchment paper and place the mixture for the first layer on it. Make sure you have enough mixture for 3 layers.

Now place the baking sheet in a preheated oven at 160 degrees and bake the cake layers for 20 minutes. Then reduce the oven temperature to 130 degrees and continue baking for another hour and a half. In the end, the cake layer will double in volume.

Now we proceed to prepare the cream. Using a mixer, beat the cream and pudding until a thick cream forms. Do not overdo it.

Melt the white chocolate using a microwave or any other convenient appliance. Generously coat our cake layers with the melted chocolate, then with the cream. Stack them on top of each other, continuing to coat each layer so that the second and third layers are coated on both sides. Finally, decorate the finished dessert with raspberries and blackberries.
