
Meringue cake with buttercream
Description
The recipe won't take much time. The only things you need to make this cake are scales and a powerful mixer. The recipe is simple, so without hesitation, prepare this magnificent, melt-in-your-mouth nutty meringue. It will turn out even better than in any pastry shop. Serve warm or chilled. Perfect with tea.

1. Place the peanuts on a baking sheet and roast them in the oven at 180 degrees for 15 minutes.

2. Transfer the peanuts to the blender jar and grind them into crumbs.

3. Beat egg whites with a mixer until thick foam forms, then add vanilla and regular sugar. Continue beating until stiff peaks form.

4. Set aside 1-2 tbsp of the whipped egg white in a piping bag, and mix the peanuts into the remaining egg white.

5. Draw two 25 cm diameter circles on parchment paper, carefully spread the meringue mixture to form two cake layers. Next to them, make two small flat rounds that will be used as crumbs for decorating the cake.

6. Using a pastry bag, pipe pretty shapes onto the empty space on the parchment paper. Bake the meringues for 2 hours at 100 degrees.

7. Prepare the cream. In a saucepan, mix the yolk with milk, add sugar, and cook over low heat until thickened, stirring constantly.

8. Beat soft butter with vanilla sugar until fluffy, then gradually add the cooled syrup in parts. Add brandy to the resulting cream.

9. Set aside a tablespoon of the cream, mix it with cocoa.

10. You can now assemble the cake. Grease the pan with butter, place the first cake layer, spread with cream, top with the second cake layer, then cover the sides and top with cream. Sprinkle crumbs on the sides, decorate with chocolate cream and meringues. Done!
