
Thin pies with potatoes
Description
Perfect with tea and coffee. The pies are prepared quickly, so the filling needs to be made in advance and chilled very well. A warm, somewhat runny filling can tear the dough and leak out during frying. Follow the recipe, and these thin potato pies will definitely delight you with both their taste and appearance. Prepare the necessary ingredients.

Pour water over the peeled potatoes, add salt to taste, and boil until tender.

Pour off 200 ml of the broth from the cooked potatoes. Cool the broth to a temperature of 36–38 degrees.

In 3 tbsp of vegetable oil, sauté the onion, chopped arbitrarily, until soft.

Mash the potatoes with a potato masher, add 30 ml of vegetable oil and the fried onion. Chill the resulting filling very well.

Add yeast, salt, and sugar to the warm potato broth. Stir. Leave for 10 minutes.

Start kneading the dough with a spoon. When it becomes difficult to stir, add a tablespoon of vegetable oil and knead by hand.

The finished dough should be elastic, soft, and not sticky to the hands. Shape it into a ball and transfer it to a bowl. Cover the bowl with a towel and leave it in a warm place for 40 minutes.

After the specified time, the dough will increase in volume. Without punching it down, divide it into two equal parts.

Roll each piece into a log. Cut the log into 7–8 pieces.

Roll out each piece into a thin flatbread. Place a heaped tablespoon of filling onto each flatbread.

Shape the pie and seal the seam well. Turn the piece over and lightly roll it with a rolling pin, thereby giving the pie a flat shape.

Heat vegetable oil in a frying pan. Fry the prepared patties for 2–3 minutes on each side. Keep the heat just below medium. Since the dough is very thin and the filling is already cooked, there is no need to fry them for long.
