
Thin pancakes with kefir and boiling water
Description

Into a bowl with high sides, break raw chicken eggs. Add granulated sugar and salt, then beat again. To speed up the process, use a mixer.

Add the kefir, into which baking soda has been added (and mixed), to the egg-sugar mixture. Beat everything again thoroughly until a foamy layer forms on top.

Gradually add the sifted flour. Mix thoroughly until no lumps remain.

Add odorless vegetable oil to the batter. You can use olive or sunflower oil. With the addition of oil, the pancakes will not stick to the pan, so you won't need to grease it constantly.

Dip the whisk into the batter and turn the mixer to full speed. Bring clean drinking water to a boil. Gradually pour the boiling water into the batter in a thin stream, continuing to whisk constantly.

Pour the batter onto the skillet a little at a time, and fry the pancakes on both sides. Brush the cooked pancakes with butter. Serve them hot.
