    1. The recipe for making thin kefir pancakes is very simple and easy even for a beginner cook. First, mix the kefir with sugar and stir thoroughly until the sugar dissolves. Then add a pinch of salt and the eggs. Gently mix until smooth and uniform. Optionally, you can first beat the eggs with sugar, then add the kefir.

    2. Combine the flour with the starch and sift. Add to the batter and mix. If lumps of flour form, it's not a problem. Let the batter rest for 10–15 minutes, then mix thoroughly again. The lumps will dissolve and the batter will become smooth.

    3. To make the pancakes soft and more fluffy, add a pinch of baking soda. There's no need to activate it, as the kefir will handle this task perfectly.

    4. To prevent thin kefir pancakes from sticking to the pan, you need to add vegetable oil to the batter. This way, you won't need to grease the pan with oil, and the pancakes won't be greasy.

    5. Once all the ingredients are added, thoroughly mix the batter and check if it has the right consistency. For really thin crepes, the batter should be very runny, almost like water, and should easily drip off the spoon.

    6. Another secret to good pancakes is using the right frying pan. It's best to choose a pan with a thin bottom and low sides. To prevent the first pancake from turning out lumpy, the pan should be thoroughly heated before pouring in the batter.

    7. The pancakes fry quite quickly. Serve them with filling or your favorite topping—jam, sour cream, condensed milk, or ice cream.
