
Tomato soup from tomato juice
Description
Here is an unusual, summery, and very tasty recipe for tomato soup made from tomato juice. In fact, the only things making it a "soup" are the potatoes and onions; otherwise, it's something quite original—though no less delicious, I must admit. If you prefer a more classic version, I recommend adding broth along with the juice (use 500 ml of juice and 500 ml of broth), and add pieces of meat to get a traditional cream soup! Good luck. 1. Pour the juice into a saucepan, a pot with thick walls, or a deep frying pan, place over heat, bring to a boil, then remove from heat. Meanwhile, roast the pieces of tomatoes, potatoes, peppers, and onions directly on a baking sheet in the oven. If you have a grill, cook them on it. If the oven takes a long time to heat up, simply sauté them in a dry skillet.

2. Now that the vegetables are ready, bring the juice back to a boil, reduce the heat, add the vegetables and spices, and let it boil again. After boiling, simmer for 10-15 minutes under the lid over low heat.

3. Next, simply blend all the contents of the saucepan in a blender, then return it back to the pan, add sour cream, bring to a boil once again, and simmer a little longer if desired for a thicker soup.
