A delicious addition to everyday and festive dishes. This recipe yields approximately 4 cups of sauce. Perfect for pasta, meat, and vegetables.

    1. Bring a pot of water to a boil. Make a small cross-shaped incision on the bottom of each tomato. Lower the tomatoes into the boiling water for 10-30 seconds, then either rinse under cold water or place in a bowl of ice water.

    3. If the skin is difficult to remove, dip the tomatoes in boiling water for another 10 seconds.

    4. Cut the tomatoes into 2-4 pieces and squeeze them over a bowl, keeping the juice.

    5. Place the pulp in a bowl. Or roughly chop the tomatoes and mash with a potato masher.

    6. Finely chop the onion and pass the carrots, celery, and garlic through a meat grinder. Heat olive oil in a large pot over medium heat. Sauté the onion, carrots, celery, and garlic for 10 minutes. Add the tomatoes and bring to a boil, then reduce the heat. Use a potato masher to crush the tomatoes. Simmer the sauce, stirring occasionally, for 30 to 45 minutes. If the sauce appears too thick, add tomato juice. Use an immersion blender to achieve the desired consistency. Season with 1/2 teaspoon of salt, or more to taste. Sprinkle with fresh basil before serving.
