
Tomato pesto
Description
A delicious and aromatic pesto sauce will come in handy when preparing any dish. I enjoy it with meat, fish, pasta, or simply spread on a slice of bread. Moreover, adding a spoonful of pesto to any soup will give the dish exciting new flavors. Want to find out how? Serve the sauce with meat or fish, or use it as a salad dressing.

I used my own sun-dried tomatoes preserved in oil. You can use fresh basil. Nuts should be well dried in the oven or on a skillet. Grate the Parmesan on a fine grater.

Place the nuts into the blender bowl.

Add sun-dried tomatoes. Mine are with spices and black pepper. You can add ground black pepper to taste. If you like spicy pesto, add chili pepper as well.

And add garlic, basil, and olive oil.

And blend everything with a blender. As you may have noticed, I used both red and yellow tomatoes. That's why the pesto turned out not very vibrant in color. I added tomato paste. You could also add pepper paste, which would taste great too.

And here the pesto is ready. The sauce turns out thick, like a paste. To adjust the consistency, you can add a little cold boiled water or more olive oil.

Very tasty even with slightly dried bread!
