
Tomato Ladybugs
Description
Stuffed tomatoes shaped like ladybugs will delight children. Serve with green pea purée. The appetizer is ready. Serve immediately.

Peel the tomatoes. Thinly slice off the top and remove the skin.

Remove the tomato pulp with a teaspoon, and save everything you remove.

Salt the tomatoes on the inside, flip them over, and set aside.

Cut the tomato flesh, salt it, and place in a sieve

Bring the salted water to a boil, add the peas, and cook until tender (usually 2–3 minutes). Remove from the pot, drain, and place in cold water. When the peas have cooled, remove and pat dry.

Blend the peas with a blender, and if possible pass through a fine sieve to remove the skins and obtain a very smooth purée.

Mix 3 tablespoons olive oil and 1 tablespoon lemon juice. Add 2 tablespoons of this mixture to the pea puree, salt, pepper, and refrigerate.

Filling preparation: Finely dice the radishes into very small pieces, place in a bowl, add 3 tablespoons of mayonnaise, 50 g tuna in oil, 50 g cooked rice, chop 1 bunch of green onions, and diced tomato flesh. Mix well well.

Fill the tomatoes with this mixture.

Turn the tomatoes over and brush the tops with the remaining butter-lemon mixture.

Using a sharp knife, cut tiny circles from the olives, as thin as possible.

Place the circles on the tomatoes to form a ladybug. Make the heads with 1 / 2 olive and 2 tips of onion, and surround with pea purée. Do this with all the tomatoes and serve immediately.
