Instructions
- 1
Step 1

Prepare the listed ingredients.
- 2
Step 2

Pour kefir of any fat content into a saucepan with a non‑stick bottom or a small cauldron, heat it, but do not bring it to a boil. The liquid should be warm. Add sugar, salt, and vanilla sugar, and stir. If you are using a silicone whisk, you can make the dough directly in the vessel; if you are using a metal one, pour the kefir into a bowl.
- 3
Step 3

Crack a chicken egg and whisk the whole mixture. If the kefir is too hot, the egg will curdle!
- 4
Step 4

Add the baking soda and baking powder, and mix. Try not to overdo the soda, otherwise the baked goods will taste bitter.
- 5
Step 5

The mixture will immediately become fluffy, with small bubbles. Add sifted flour to it and stir.
- 6
Step 6

Finally, pour odorless vegetable oil into the batter. Stir it in, and you can bake the pancakes.
- 7
Step 7

Heat the crepe pan over medium heat. It does not need to be greased. Pour half a ladle of batter into the center of the pan and fry until the bubbles on the surface of the batter begin to pop.
- 8
Step 8

Flip to the other side and fry for another minute. In this way fry all the remaining batter, turning it into fragrant pancakes.
- 9
Step 9

Place them on a plate and serve hot with floral honey and assorted berries as a topping.
