
Tokash (flatbread)
Description
Homemade pastries for tea. Tokash is a traditional Kazakh flatbread made from sourdough and baked in a tandoor (a special Kazakh oven). We will prepare tokash in a modern kitchen using an oven. It's best to shape the flatbreads by hand so the dough can feel the warmth of your hands. Tokash is served cooled, with tea or hot dishes, as bread.

We will need: flour, yeast, water, salt, and vegetable oil for greasing hands.

Sift the flour, make a well in the center, and add the yeast, warm water, and salt. Grease your hands with vegetable oil and knead the dough into a soft, sticky consistency. Cover it with a towel and let it rise in a warm place for 30 minutes.

Preheat the oven to 180 degrees. Divide the dough into 4 equal parts and coat each part in flour. With your hands, shape each part into a flat round cake. Make a depression in the center of each cake using your fingers, and prick it with a fork. Grease the baking tray with oil and place the cakes onto it. Bake until done (approximately 20 minutes).
