Description
A delicious addition to everyday and festive dishes. Store "Tkemali" on the bottom shelf of the refrigerator. It's best to distribute tkemali into small jars, as it doesn't keep long after opening. If you find the sauce too sour or lacking salt, you can adjust the taste directly during cooking or before use. The specified amount of ingredients yields approximately 250 ml of sauce.

Prepare all the necessary ingredients.

Sort the dogwood berries, removing spoiled and unripe ones, wash them, and place them in a saucepan. Pour water over the berries, place on medium heat, bring to a boil, and cook for 15 minutes. Remove the saucepan from the heat and let it cool.

Strain the cornel decoction, and remove the pits from the berries.

Rinse the pepper and herbs, dry them, and peel the garlic. Place the chopped pepper, parsley, and garlic into the blender container. Blend until smooth.

Add the cleaned barberries, pour in three tablespoons of the decoction, and blend until smooth.

Transfer the dogwood mixture to a thick-bottomed saucepan, add salt, sugar, spices, and vegetable oil, and mix well. If the mixture is too thick, add a little more broth to achieve the desired consistency. Place over low heat and cook for 10 minutes after the first bubbles appear, stirring constantly.
