Description

Delicious baked goods for the whole family. Tiropita can be made as one large pie or as triangular hand pies that are very convenient to take on a picnic, to school, or to work. For the filling, feta is used as the main ingredient, but adding other types of cheese is not prohibited. You can even find versions with cottage cheese. In the classic version, tiropita is traditionally made with phyllo dough, but phyllo is not as readily available here, so if you can’t find it for sale, don’t despair! We’ll replace it with store-bought puff pastry—just keep in mind that you need to roll it out thinly, so use a larger baking dish. The pie turns out tender, airy, and wonderfully delicious. Serve cooled or slightly warm.

    Prepare all the ingredients.

    Whisk the eggs with the milk.

    Add any hard cheese grated on the coarse side of a grater.

    Crumble the feta cheese with your hands or mash it with a fork.

    Add any fresh herbs.

    Mix everything together. The filling is ready.

    Roll out half of the dough and place it in an ovenproof dish greased with oil. The dough should be slightly larger than the baking dish so the edges hang over a little. Brush the dough with melted butter.

    Spread half of the filling on top.

    Cut the second half of the dough in half and roll out each piece to fit the size of the pan. Cover the filling with the first piece of dough and brush the dough with butter. Spread the remaining filling on top, cover it with the second rolled-out sheet of dough, and brush it with butter.

    Now cover the pie on all sides with the overhanging ends of the dough. You can trim the excess with scissors and place it on top. Brush the pie on all sides with the remaining butter and bake in the oven at 180–200 °C for about 25 minutes.

    The top should turn golden brown. The pie is especially good served hot, but it is also wonderful cooled, with a cup of aromatic coffee.
