Separate the egg whites from the yolks. Rub the sugar with the yolks, then add the mascarpone.

In another bowl, beat the egg whites, then incorporate them into the yolk mixture. Pour half of the mixed cream into ramekins.

Soak the cookies in the prepared coffee solution, but be sure to quickly remove them so they don't have time to become soggy.

Place cherries and cookies into each ramekin. Pour the remaining cream over the top.
