
Tiramisu with almonds
Description
The dish is prepared without unnecessary complications. To make almond tiramisu, I use raw almonds, grind them in a blender, and add to the cream. You can also decorate the finished dessert with almond slices. Feel free to replace the liqueur with cognac or brandy; sometimes I just use strong brewed coffee and don't add any alcohol. You may add berries to taste, though this is completely optional. The ready dessert can now be served.

First, beat the yolks with 80 grams of sugar.

Place the cream over heat and bring to a boil. As soon as it begins to boil, remove from heat and stir in the beaten egg yolks. Return to heat. Reduce the heat and cook the mixture for a couple of minutes, stirring constantly.

Grind the almonds in a blender and add to the mixture. Stir, then set aside the resulting mass to cool.

Brew the coffee, mix it with the liqueur, then let it cool and pour it into a bowl. Dip each savoiardi into the bowl for just a couple of seconds: the biscuits absorb the liquid very quickly.

Then place the cookies evenly on the bottom of the mold.

If you have any berries at home, feel free to add them to the dessert. I made two versions: one with strawberries and one without berries. The one with strawberries was eaten before we even had time to properly admire it!

Now prepare the cream: beat the mascarpone, then mix in the custard. Beat everything together again.

Evenly spread the cream over the berries and savoiardi.

Toast the remaining chopped almonds and 20 grams of sugar in a pan to make sweet almond crumbs.

Sprinkle the tiramisu with this crumb topping and refrigerate the dessert for about an hour. Before serving, you can additionally dust the finished almond tiramisu with cocoa powder.
