It must be left to rest before serving, allowing the savoiardi to soak well. Once ready, the dessert can be served.

Brew espresso (yielding 120 milliliters of finished product), mix it with wine (2 tablespoons) and vanilla extract.

Place the egg yolks in a bowl, add 2 tablespoons of wine, 3 tablespoons of sugar, set the bowl over a double boiler, and whisk continuously for about 8 minutes.

Remove the bowl from the heat and add the mascarpone, then thoroughly mix the mixture with a mixer.

In a separate bowl, whip the chilled heavy cream until stiff peaks form.
