
Tiramisu with mascarpone
Description
Experts say that without real mascarpone made from milk of cows from the Apennine Peninsula and without Marsala (Italian wine), you can't make a true tiramisu. But let's try anyway! Here's a simple recipe.

Rub the yolks with sugar. Add to the mascarpone and mix thoroughly until smooth.

Beat the egg whites until stiff peaks form. The mixture should not fall out when the container is inverted. Gently fold the egg whites into the yolk-cheese mixture using a silicone spatula.

Dip the cookies into the cooled coffee with cognac for 1 second, shake off excess, and place them at the bottom of the mold. My mold is 10*20 cm. When serving the dessert to children, do not add cognac.

Spread half of the cream on top and smooth it with a spatula. Then add the remaining half of the cookies, followed by another layer of mascarpone cream. Refrigerate the tiramisu for at least 6 hours, or overnight, to allow it to soak.
