
Anniversary Tiramisu Cookie
Description
If you don't have time to bake biscuit sticks for "Tiramisu," but really crave a dessert—this recipe will come to your rescue. Savoiardi cookies can easily be replaced with our familiar domestic "Yubileynoe" cookies; let's treat ourselves to a dessert inspired by the Italian classic. I'm also suggesting a simplified cream, as using raw eggs in creams these days can be risky. And I assure you, this cream is just as good. So, let me tell you how.

Brew coffee without sugar. We will need about one cup. Let the coffee cool, then add brandy to it.

Whip the cream with powdered sugar into a firm, stable mixture.

Then add the whipped cream to the mascarpone in small portions, beating until smooth.

I did not soak the first layer of cookies in coffee, but you can. Place the cookies on a plate or in a dish with edges, especially if your cream turned out a bit runny.

Spread the cookies with cream, place the next layer of cookies soaked in coffee with cognac (dip them very quickly—just immerse and remove), then again cream, and so on. Evenly sprinkle the top layer with cocoa powder. You can drizzle with melted chocolate. Refrigerate for soaking and setting.
