
Tilapia with quinoa and cucumber
Description
This simple and delicious dish takes only 25 minutes to prepare. If desired, you can add a tablespoon of butter to the pan while cooking the fish to give it a special flavor.

1. Remove the skin from the tilapia fillet and cut the fish into 8 pieces. Cut the English cucumber into large pieces. Crumble the Feta cheese.

2. In a small saucepan, add the quinoa, 2 cups of water, and 1 teaspoon of salt. Bring to a boil over high heat. Reduce heat to medium and cook until the water has evaporated, about 15 minutes. Transfer the cooked quinoa to a bowl and let cool for 5 minutes.

3. Heat 1 1/2 teaspoons of vegetable oil in a large skillet over medium heat. Pat the fish dry, season with salt, black pepper, and paprika. Cook the fish fillets for about 4 minutes, turning once halfway through cooking.

4. Mix the chopped cucumber, basil, crumbled feta cheese, 1 teaspoon of vegetable oil, and lemon juice in a bowl.

5. Add the quinoa and mix. Season with salt and pepper.

6. Divide the quinoa among the plates, place the fish on top, and serve immediately. If desired, garnish the dish with lemon slices.
