
Tikka Masala in a slow cooker

1. Cut the chicken into pieces 2.5-3.5 cm in size. Sprinkle with coriander, cumin, and salt. Mix with yogurt until the chicken is evenly coated. Cover the chicken and let it stand for 10 minutes.

2. Melt 1 tablespoon of butter in a large skillet over medium heat. Increase the heat to high and quickly sear about 1/4 of the chicken. Transfer the chicken to the slow cooker. Repeat with the remaining chicken, using 1 tablespoon of butter to sear each batch in the skillet. Place the jalapeños on top of the chicken.

3. Prepare the sauce. Dice the onion. Mince the garlic. Grate the ginger. Place a saucepan over heat and melt the butter over medium heat. Add the onion, garlic, and salt, stir. Cook, stirring, until the onion begins to brown slightly at the edges.

4. Add garam masala and ginger, stir. Fry until fragrant, about 1 minute. Increase the heat and add tomato purée and sugar. Mix well and bring to a boil.

5. Pour the sauce over the chicken in the slow cooker. Cook for 5 hours, or until the chicken is very tender. Stir the starch into the cream with a fork or whisk until smooth. Pour into the slow cooker and gently mix. Cook for 10 minutes.

6. Serve the dish with hot rice, sprinkled with chopped cilantro.
