Dough
Description
Homemade baked goods for tea. For this dough only fresh live yeast will do. Be sure to sift the flour before kneading the dough, this will allow the flour to become saturated with oxygen and make the baked goods airy. From the dough you get very soft pies, buns, rolls and other yeasted pastries at your discretion Serve warm or cooled. Perfect with tea.
Instructions
- 1
Step 1

Prepare all the necessary ingredients. Take the products out of the refrigerator in advance so that they are at room temperature.
- 2
Step 2

Warm the milk slightly; it should be warm, but not hot. Add the yeast to the milk and stir until smooth.
- 3
Step 3

Add sugar and 3 tablespoons of flour to the milk with yeast. Mix everything well until a homogeneous mass.
- 4
Step 4

Cover the starter with a clean cloth and leave it in a warm place for 10 minutes so the yeast can start working. It should become a fluffy mass with many bubbles.
- 5
Step 5

Melt the butter, let it cool, and add it to the sponge.
- 6
Step 6

Break the egg into a cup, whisk it, and pour half of the egg into the starter. Set aside the remaining egg; it will be useful for greasing the baked goods before baking.
- 7
Step 7

Mix everything together, add 200 grams of sifted flour. Knead a soft, non‑sticky dough.
- 8
Step 8

And now the most interesting part. Pour very cold water into a large pot, and drop the dough into it. It will immediately sink and settle at the bottom.
- 9
Step 9

Leave the dough alone and after just 20–30 minutes it will rise to the surface. This means that it has risen and is practically ready.
- 10
Step 10

Remove the dough from the water, pat it dry with a paper towel. Sprinkle the remaining flour onto the table and place the dough on it. Knead the dough until it absorbs all the flour and is no longer raw.
- 11
Step 11

Our dough "Utoplenik" is ready. Now it can be shaped into pastries and baked after proofing.
