
Crumbly dough
Description
It will be perfect with tea and coffee. The dough is suitable for pies, little baskets, tarts, cookies, and even pizza (for the latter you need to reduce the amount of sugar, adding a couple of pinches of salt). The crumbly texture of the dough can be adjusted with the amount of water; if your recipe requires the dough to become homogeneous, simply add water in 0.5‑teaspoon increments while mixing in the food processor and watch the structure you need. This dough is very convenient; I sometimes make a large batch, divide it into portions of about 300 g, place them in bags, put the bags in a container with a lid, and store them in the refrigerator until needed.

Prepare the ingredients for the dough. Let’s get started!

Install the metal blade in the processor. The butter should be pre‑chilled very well. Place all the ingredients, except the egg, into the bowl.

Grind on the highest speed for a couple of minutes, until the mixture turns into fine crumbs.

Crack in a raw egg. Turn the processor on again for a couple of minutes.

Today I decided to bake a pie with a filling of fresh apples and pears— the more fruit, the tastier the pie! For the filling you also need sugar (a couple of tablespoons) and a little cinnamon (if you like). In winter fresh fruit can be replaced with thick jam.

Turn the oven on to 180 degrees and let it preheat. Line the removable pan with parchment paper, add 2/3 of the dough, press it down with your fingers and form low edges.

With apples (I used two large apples) and pears (5 pieces), peel them and remove the cores. Cut the fruit coarsely. Place them on top of the dough.

Dust with sugar or powdered sugar, sprinkle with cinnamon or nutmeg.

Spread the remaining third of the flaky dough on top, gently press the edges with your fingers so that the pie has a beautiful appearance.

Bake for 30–35 minutes. Let the finished pie cool in the pan.

Remove the ring, transfer the cake to a plate, slice it, and try!
