Description

Prepare a simple dough by mixing egg, flour, water, and salt. Sift the flour to avoid lumps in the dough. Place the dough into a plastic bag or pastry bag. Prick the bag with a thin needle.

Heat the skillet. Without adding oil, pour the batter in a thin stream to form a lacy pattern. Fry the lattice for 15 seconds on one side, then immediately transfer it to a plate.

When the dough starts to darken, it should be quickly removed. To take the dough off the pan, carefully lift it with a thin, flat spatula. The hot lattice is very fragile, so handle it with great care to avoid breaking it.

The thinner the stream of batter coming out of the bag, the thinner and more delicate the kataifi dough strands will be. You can use the dough immediately for preparing dishes, or store it for some time. It's best to store the dough on a flat surface, covered with plastic wrap or a towel.
