Corn Flour Dough for Pies
Description
Homemade pastries for tea. The dough turns out looser than regular yeast dough, but it shapes beautifully. Do not expect baked goods from this dough to be like those made with regular flour; they come out denser and have a hint of mamalyga flavor. It should be rolled out thinner, since during proofing the corn flour expands but remains denser. To start, you can try using both flours in equal parts, then the pastries will turn out more delicate. Serve cooled or slightly warm.
