
Dumpling dough for steamed vareniki made with kefir
Description

Step 1

Sift the high-grade wheat flour into a bowl twice so that it becomes enriched with oxygen. Then make a depression in it. Warm the kefir slightly until it is just lukewarm.

Pour a glass of warm kefir into the indentation you made in the flour, and add a raw chicken egg. Add a pinch of salt and a teaspoon of baking soda.

Mix all the ingredients to form a dough, adding flour as needed. The dough should be soft, not stiff. Let it rest for half an hour, covered with a towel beforehand.

Take the finished dough out of the bowl and dust the work surface with flour. Roll out the dough into a 5-millimeter-thick sheet using a rolling pin. Cut out circles from it using a glass or cup.

If using frozen cherries, thaw them in advance. Wash and remove the pits. Place half a teaspoon of sugar and a couple of cherries into each round piece of dough. Pinch the edges together and shape into dumplings.

Pour water into a saucepan and place a steamer inside. Put the saucepan on the stove and bring the water to a boil. Place a portion of dumplings in the steamer and cover the saucepan with a lid. Steam the dumplings over high heat for about 8–10 minutes.
