Delicious pastries for the whole family. To properly prepare Uzbek-style samsa, you simply need to know how to work with dough. If you're not a beginner in this, you'll easily manage the recipe. Either way, I'll guide you through each step, in case you forget or mix something up. Follow my tips, and you'll succeed. Serve warm or chilled. Perfect with tea.

    Pour warm water into a bowl. Break an egg into it. Cut the softened butter into pieces and add to the bowl. Add salt.

    Sift the flour directly into a bowl through a sieve, stirring continuously until all the flour is incorporated. It's best to use a fork, carefully breaking up any lumps.

    Knead the stretchy dough. It should be pliable, not stiff and not too soft. Divide the dough into 3 balls. Place them under a towel and let rest for 20 minutes.

    Meanwhile, prepare the filling. Usually, it is made from meat with the addition of lamb or lamb fat. After the time has elapsed, roll out the small pieces into very thin layers. Generously brush each layer of dough with melted fat or butter. Stack the layers on top of one another.

    Roll up the three stacked layers into a log. Slice the resulting log into pieces 1.5 centimeters thick.

    Roll out each piece. They will be about 15 centimeters in diameter. Of course, it depends on the amount of dough and your preferences. Some people like smaller buns, others prefer larger ones.

    Place any filling you prefer in the center of such a flatbread. It can be a mixture of pork, beef, and lamb, or any poultry. You can also add herbs, cheese, and eggs if desired. Seal the filling with dough in the shape of a triangle.

    I will bake the samsa on a baking sheet lined with parchment paper. Place the samsa seam-side down. Bake at 180-200°C (356-392°F) for 40-50 minutes. After 35 minutes, you can brush the samsa with a yolk beaten together with vegetable oil to get a nice crust, then finish baking. The taste and aroma are absolutely amazing!
