
Universal dumpling dough
Description
This dough is ideal for making both dumplings and vareniki, despite containing no eggs. To make it more elastic, add a little vegetable oil to the flour along with very hot water—this will make the dough easier to knead and more uniform. Also, don't forget to let it rest for a while. The dough is much easier to work with after resting at room temperature for at least 15 minutes.

1. Put flour and salt into a bowl and mix. Add vegetable oil and very hot water. Stir the dough with a spoon.

2. Sprinkle the work surface with flour, turn out the contents of the bowl, and knead a soft, elastic dough, gradually adding flour. By the end of kneading, your hands should be clean and the dough should not stick to them.

3. Let the dough sit at room temperature for 15-20 minutes. The dough is ready, you can start shaping dumplings.
