Of course, there are quite a few different ways to make dumpling dough, and every homemaker chooses the one that, in her opinion, results in the tastiest dumplings. I've made my choice too, and for several years now I've been making them only with this simple water-based dumpling dough recipe, because for me it's the best. With this dough, dumplings turn out very tasty, neat, and don't fall apart during cooking at all. Plus, it's a pleasure to work with— it doesn't stick to hands or the table, and rolls out very easily. Overall, it results in excellent pliable and elastic dough.     First, take a deep bowl and pour one glass of water into it, then add a teaspoon of salt.

    Break two eggs and whisk thoroughly with a whisk until a homogeneous mixture is obtained.

    Before adding flour to the egg mixture, it should be sifted so that our dough becomes more uniform and elastic. Therefore, sift 5 cups of flour through a sieve or colander.

    We set one glass aside for now, as we will use it a bit later. The remaining four glasses we pour into a bowl, forming a mound, make a depression in the center, and pour the egg and water mixture into it.

    Now gently start mixing all the ingredients in circular motions using a spatula or spoon.

    When the mixture becomes more or less homogeneous, turn it out onto a floured surface and begin kneading the dough by hand. Gradually add the flour from the fifth glass until the dough reaches the desired consistency. The dough should be fairly firm and elastic. To check whether you have kneaded the dough sufficiently, shape it into a ball and place it on the table; if it holds its shape, the right consistency has been achieved.

    Place the prepared dough on a plate and cover it completely with a plastic bag, let it rest for half an hour.

    After 30 minutes, the dough needs to be kneaded thoroughly once again. Now we can proceed directly to making the dumplings. Good luck!
