
Dough for Easter bread
Description
Perfectly pairs with tea and coffee. You'll get an incredibly delicious Easter kulich right the first time—try making it using this recipe. To prevent the bread from becoming dense, don't add too many beaten egg whites—two will be enough. However, you'll need at least 3–4 egg yolks. Dried cranberries can be substituted with cherries, candied orange peel, dried fruits, etc., if desired. Glaze only completely cooled kuliches, otherwise the icing will run. Serve warm or chilled. Ideal with tea.

Prepare the listed ingredients. You can use milk of any fat content, but use high-quality butter with at least 82% fat content.

Crumble the fresh yeast into a deep container and add 1-2 tbsp of sugar.

Slightly warm the milk to 30-35 degrees and pour it into a container. Mix the contents thoroughly with your hand or a fork until the yeast is completely dissolved. Add 80-100 grams of wheat flour and stir.

Cover the container with plastic wrap and place it in a warm spot at room temperature. Let it rest for 30 minutes to allow the starter to rise.

After the specified time, the sponge will have risen at least twice in volume and become porous and airy.

Separate the egg whites from the yolks and beat two egg whites with half of the sugar until a fluffy foam forms.

Melt the butter, pour it into the sponge, add the remaining sugar, and mix in the beaten egg whites and yolks. Knead thoroughly.

Add the premium wheat flour in parts. There is no need to add baking powder — the dough will be fluffy thanks to the added yeast. Knead a firm, sticky dough — it should not be dense!

Crumble the walnut kernels in your hands and add them to the dough container, along with the dried berries. Mix everything thoroughly. The Easter bread dough is now ready!

Place the dough into paper molds halfway and let it rise for at least 1 hour in a warm place. Then bake the kuliches for another 40 minutes at 180 degrees. You can also make a delicious roll with jam or berries from the same dough. Happy Easter!
