Step 1

First of all, you need to prepare the syrup. To do this, mix sugar, vegetable oil, and water in a saucepan, then add honey. Place the saucepan over low heat and cook until the sugar dissolves completely. Let the syrup cool.

Step 2

Grind the spices—clove and cardamom—in a mortar. Add cinnamon if using cinnamon sticks. To this spice mixture, add ground ginger or finely grated fresh ginger. To make grinding easier, you can add a little granulated sugar to the mortar. Add cocoa as well.

Step 3

Cut the dried apricots into small pieces and pour boiling water over them together with raisins. This is necessary to soften the dried fruits. Meanwhile, chop the nuts with a sharp knife. You can use any nuts to your taste. When the dried fruits become soft, mix them with the nuts.

Step 4

Now mix all the prepared ingredients in one bowl and start gradually adding flour. After adding the first handful of flour, neutralize the baking soda with vinegar, mix everything well, and add the remaining flour. The dough should have the consistency of thick sour cream. All that's left is to bake the gingerbread.
