
Dough for layers
Description

We will prepare the dough using a water bath, so immediately choose a bowl that you can place over a pot of water. Add the sugar and eggs.

Beat the eggs with sugar until a fluffy foam is obtained.

Add soft butter, baking soda, and honey. Mix well.

Place the container over a saucepan with boiling water. Continuously stir our future dough. Keep it over the double boiler for about 15 minutes.

The mixture will initially foam.

And then it will slightly darken.

Add one-third of the required amount of flour

Mix and keep on a water bath for another minute to a minute and a half. Stir.

Add another third of the flour and mix with a spoon or spatula.

Pour the remaining flour onto the table and place the mass from the pot on top of it.

And carefully (the mixture is hot), start kneading the dough, gradually incorporating the flour from the work surface. The dough should not be too stiff, as it will be difficult to roll out.

Let the dough stick to your hands a little; you can always add more flour when rolling out the layers.

Divide the dough into 10-12 pieces and roll out thinly.

Bake the cake layers in a preheated oven at 180–200 degrees until golden brown. The cake layers bake very quickly! Trim the edges of the layers while they are still hot.
