
Khychin dough
Description
Homemade pastries for tea. In shape and preparation, khachapuri resemble the familiar flatbreads we know. They can be made with a variety of fillings: cheese, potatoes, cottage cheese, meat, mushrooms, herbs, etc., as well as combinations of several ingredients. This is a delicious and filling dish. These flatbreads are perfect for a snack or can be used instead of bread. Serve warm or chilled. Ideal with tea.

1. Sift the wheat flour to make the baked goods light and airy, transfer it to a bowl, add the dry yeast, and mix lightly.

2. Pour the whey into a saucepan, add sugar, salt, and vegetable oil, mix and slightly warm over heat, then gradually pour it into the flour in a thin stream.

3. Knead the dough, place it on the table, and roll it until it stops sticking to your hands. Put the dough into a bowl, cover it with a towel, and leave it in a warm place for 1.5–2 hours.

4. Boil the potatoes, mash them into a puree, mix with grated cheese, and season with salt.

5. Divide the finished dough into portions, place them on the table, put a ball of filling on top, wrap the dough around the filling, and carefully seal the edges to prevent the filling from leaking. Roll out into a flatbread about 1.5 centimeters thick.

6. Fry the flatbreads on a hot skillet with a generous amount of sunflower oil (on both sides). Stack them on top of each other and serve.
