Description

This recipe won't take much time. I've been searching for this exact khachapuri dough recipe for a long time. Here's the story: about a year ago, a small Georgian bakery opened near my home, where they basically make nothing but khachapuri. But the khachapuri they make is so incredibly delicious that I simply don't have words to describe it. They bring in authentic cheese from Georgia, and if you'd like, you can even buy some directly at the bakery. That's exactly what I did. I searched for khachapuri dough recipes online, but no matter what I tried, it never tasted as good as the one from the bakery. Eventually, I spent an entire month pestering their head baker, a young guy named Levan, until he finally gave in and shared the khachapuri dough recipe with me :) And now, I'm sharing it with you. Trust me, this version of the dough is absolutely the best.

    Heat the water to 35 degrees and dissolve the yeast in it.

    Into another bowl, sift the flour and make a depression (crater) in it.

    Into this crater, add the dissolved yeast, oil, milk, and raw egg. If you want the khachapuri dough to have a golden hue after baking, add a teaspoon of sugar.

    Knead the dough from the center outwards until all ingredients are mixed.

    Knead the dough until you get a dry ball like this one.

    Cover the bowl with the dough ball with a towel and leave it in a warm place for 2 hours. During this time, the dough will rise, as shown in the photo.

    Add the remaining 150 grams of flour to the dough. Knead the dough once again by hand.

    The specified amount of ingredients yields enough dough for three khachapuri. Divide the dough into three parts—and that's it, the khachapuri dough is ready!
