
Dough for chebureki using mineral water
Description
For this recipe, choose highly carbonated mineral water and chill it well beforehand. This dough is suitable for any filling and is very easy to prepare.

Prepare all the ingredients for cooking right away. The mineral water should be well chilled – it is advisable to keep it in the freezer for 30 minutes beforehand.

Put the egg into a large bowl, add salt and sugar.

Beat these ingredients with a mixer until the mixture lightens in color.

Without turning off the mixer, continue beating and slowly pour in the chilled mineral water in a thin stream. You should end up with a very fluffy mixture.

Sift all the flour into a separate dry bowl.

Then add the fluffy mixture to the sifted flour and pour in the vegetable oil.

Start kneading the dough. First, mix all the ingredients with a spoon, then continue kneading by hand until you get a smooth, non-sticky dough that doesn't cling to your fingers. It's essential that the dough doesn't stick to your fingers, otherwise your chebureki will fall apart during shaping. Therefore, if necessary, add a little more flour while kneading. Shape the dough into a ball, place it into a food-grade plastic bag, and refrigerate for 1 hour.

While the dough is resting in the refrigerator, you can prepare the filling for the future chebureks. To do this, place the ground meat in a bowl, grate the peeled onion on a fine grater, press the peeled garlic cloves through a garlic press, add salt, ground pepper, and mix everything until a homogeneous mass is obtained.

Then divide the chilled dough into several equal parts. Lightly dust the work surface with flour. Roll out each piece of dough in turn into a thin circle, and place 2 tablespoons of the prepared meat filling in the center of each.

Press the edges of the dough with a fork to shape the chebureki pieces, as shown in the photo.

In a skillet, heat the vegetable oil well, then fry the chebureki over medium heat on both sides until golden brown and appetizing bubbles appear on the dough.
