
Dough for buns
Description
This is not quite an ordinary yeast-based dough—it includes ricotta. I think everyone will enjoy its texture: soft and tender, yet slightly crumbly thanks to the cheese. A very interesting baked treat. And if you shape the buns like croissants, as I did, you can add any filling you like. The baking is done. Serve it at the table.

Sift the flour and mix with all the dry ingredients.

Combine the soft butter with the flour and mix.

Add ricotta, sugar, cinnamon and make a crumb like this.

Now knead the dough by hand and roll it out into a thick sheet. Fold it several times and roll it out again.

Wrap the dough in plastic wrap and refrigerate for 30 minutes, or preferably overnight.

Then roll out the dough into a circle and cut it into triangles, roll into croissants or shape into buns of other forms. Leave in a warm place for 3 hours.

Bake at 190 degrees for 20-25 minutes.
