
Rabbit Terrine

Grind rabbit fillet, garlic, and cream in a blender until smooth and thick. Season with salt and pepper to taste.

Add diced ham and shelled pistachios to the ground meat. Mix until smooth and uniform.

Lay a sheet of foil on the table. Thinly slice the bacon and arrange it in overlapping layers, from bottom to top. Place the ground meat crosswise and shape it into a sausage.

Wrap the foil and roll into a log so that the bacon slices wrap around the filling.

Where the minced meat is visible, cover that area with bacon as well. Roll into a tight roulade, wrapping the terrine in foil.

Bake the terrine in the oven for 1 hour at 180°C. Then cool and refrigerate overnight.
