
Terrine
Description
The recipe won't take much time. I'll show you a simple way to make a meat terrine with pistachios. You can use several types of meat and offal in the filling. The nuts give the appetizer a special piquancy. The process itself is quite simple; the main thing is to choose the right molds in which the dish will be cooked. You can serve the terrine with your favorite sauce and pickled gherkins. Be sure to try it—the texture of the appetizer is incredible; you'll lick your fingers. The appetizer is ready. Serve immediately.

1. Here is the set of ingredients we will use to prepare a homemade terrine from two types of meat and liver.

2. Run the meat through a meat grinder (or chop in a blender) if you are not using ready-made ground meat, along with the liver. Add minced garlic, salt, pepper, thyme, and nutmeg. Mince the onion, sauté until lightly golden, and add to the ground meat. Mix everything well. In a separate bowl, beat the eggs with the cream and brandy.

3. Bake the terrine in a mold like this. Line it with strips of bacon (you can use prosciutto) so that they hang over one edge of the mold.

4. Place half of the ground meat on the bottom of the bacon-lined pan. Spread the nuts in an even layer.

5. Top with the remaining filling and carefully cover with bacon. Here's what it looks like. You can leave the terrine like this for 7–8 hours before baking, but it's not necessary.

6. Preheat the oven to 175°C. Cover the mold with three layers of foil and place it in a larger mold. Pour in boiling water and bake the terrine for 1.5 hours as shown in the photo. Afterward, remove the foil and let cool for 30–40 minutes. Cover the terrine with parchment paper, place a small weight on top, leave at room temperature for a couple of hours, then refrigerate for 24 hours.

7. During this time, the terrine will firm up nicely and slice perfectly into portion-sized pieces.
